Raw pasta, or pasta dough, is made from a mixture of flour, water, and sometimes eggs: 

  • Ingredients

    Pasta dough is typically made from all-purpose flour or “00” high-gluten flour, water, and eggs. Other ingredients, such as olive oil, pureed spinach, or spices, can be added to the dough to change its color or flavor. 

  • Preparation

    The dough is kneaded like bread dough and then pressed through rollers until it reaches the desired thinness. The pasta can then be cut into long noodles or shaped into tortellini or ravioli. 

  • Manufacturing

    Pasta is also made in a continuous extruder, which is equipped with dies that determine the shape of the pasta. 

Pasta is a starchy food that is often associated with Italian cuisine. It is typically formed into ribbons, tubes, cords, or other shapes, and then cooked by boiling or baking. The shapes were originally developed to give pasta specific characteristics, such as the ability to hold sauces or retain heat.
